It’s finally starting to feel like summer and I’m so excited. I have been loving the weather recently, and my body has to.

Why? Because it’s finally getting the chance to top up on some much needed vitamin D. In Ireland from October to May the quality and quantity of sunlight is not sufficient for us to synthesise our own, meaning we are dependent on food sources like oily fish, eggs and fortified milk or supplements. Once June hits we get a great blast of vitamin D.

Everything always feels so much easier in the sunshine, including the idea of eating well and keeping moving. Salads seem so much more appealing and getting out for a run or a walk is much more enjoyable.

Eat well:

This month we are loving, tomatoes. They are in season right now and are a key ingredient in so many of my recipes. I use them in soups, curries, pasta sauces, the list goes on. I’m even currently growing tomatoes in pots!

In an ideal world – It would be organic fresh tomatoes all the way, but I realize that is not realistic a lot of the time so for that reason I always keep a few tins of chopped tomatoes in my cupboard. Aim for tomatoes without added sugar and tinned in their own juice. Passata is another must have for me. It’s an uncooked tomato purée that has been strained of seeds and skins. It adds a delicious texture and flavour to so many dishes.

Keep Moving:

Fitness is a year round activity. Regardless of what life throws at us, it’s important to find new ways to stretch our bodies and keep fit. Fitness is your health pension, you need to put in the time to benefit you later in life.

This month we are trying new activities in the fit foodie office! We are putting our hand up and throwing ourselves at activities that we don’t normally do. We tried tag rugby, it was super fun and a great way to get out in the fine weather.

The next plan is rollerblading so watch this space! Consider doing something new this month. It’s always rewarding to find new ways to keep fit.

Gadget of the month:

Storage containers are my gadget of the month, if your aim is to eat better, being organised with your meals and snacks is key.

One of the first steps to a successful “meal prep” is to invest in good quality, airtight containers, ideally BPA-Free or glass and microwave safe. Buy a variety of sizes to organise you for snacks too.

A BPA free water bottle is a great investment and will help to keep you happy and hydrated while at work. Display it on your desk with pride!

Having a stash of these containers makes Fit Foodie hacks like cooking once and eating twice or making friends with your freezer that little bit easier.

You can prepare your overnight oats and store them in a glass jar ready to grab on your way out the door in the morning. You can pack up your leftovers into a plastic container for a work day lunch the next day. You can batch cook multiple portions of a dish and freeze them in so that you are never stuck for a delicious home cooked meal. There is no right or wrong way to do it
